I have always loved Louisa May Alcott’s description of Amy with the pickled limes.
Pickled limes were coveted by New England school children in the 1800’s. They were sold in candy shops for around a penny a piece. I am sure that like Pokemon cards of today pickled limes caused a major headache for many New England school teachers. We decided to give making pickled limes a try. There are many variations and recipes on line. We chose this recipe because it took the least amount of time.
1/2 cup kosher salt
1 to 1-1/2 cups lime juice
Clean limes well and allow to fully dry. Cut limes into quarters, place on a microwave safe plate and cover. Place in microwave for one minute. Layer in a jar limes, salt, and lime juice leave for 10 to 14 days. Enjoy!
