IMG_7078Each of my children had the assignment to make something with the wonderful influx of mangoes from our neighbors. While my daughter made chutney, my son elected to bake mango bread. It was seriously yummy.

 

Mango Bread Directions

2 cups of mango puree (we simply pureed mangoes using a hand blender)

2 cups all purpose flour

2 tsp. baking soda

2 tsp. ground cinnamon

1/2 tsp salt

3 eggs

3/4 cup softened butter

1 1/4 cups white sugar

1 tsp. vanilla extract

 

1. Preheat oven to 350 degrees. Grease two loaf pans.

2. Sift the flour into a mixing bowl.  Next, add all the other ingredients and mix thoroughly.

3. Divide mixture into the two bread pans.

4. Bake approximately one hour or until the loaves are cooked through.
