My neighborhood is having a “bumber crop year” in mangoes. When walking my dog I am regularly approached by kind neighbors offering me mangoes. It is wonderful! Cooking is a great activity for children. The act of cooking and following a recipe is multidisciplinary. Children have to read the recipe, follow instructions, measure (math skill), use fine motor skills to measure and pour, witness cause and effect, and last but not least taste which is sensory. With all these fabulous mangoes each of my children took on the challenge of preparing a dish using our neighborhood mangoes. My daughter made mango chutney. It was delicious and yielded enough for us to share with our neighbor across the street who is our primary mango source.
I purchased this OXO mango slicer from Target. I highly recommend it. It makes removing the pits a breeze.
Mango Chutney Recipe
5 cups of diced mangos
1 cup light brown sugar
2 tsps. ginger
1 tsp. curry powder
2 large minced garlic cloves
1/2 tsp. of kosher salt
1 cup of apple cider vinegar
1 cup of raisins
ground pepper to taste
cayenne pepper to taste
Directions:
Put all ingredients in a saucepan. Bring the contents to a boil. Reduce heat to a simmer. Allow mixture to simmer until thickened. Once cool serve with fish, pork, or chicken. Store the rest in an airtight contained in refrigerator.
